Our contributor Summer Miller is back to share her meal plans for the month of January.  The goal for this week's meal plan (and really for the entire month) is to increase our vegetable intake without having to think too much about it. We all define "healthy food" in different ways. Some of us are vegan or vegetarian, others are more meat-focused with the Paleo or Whole30 diet. Still others feel best on the fish-heavy and fat-rich Mediterranean diet. One characteristic uniting all these different "diets" is that vegetables are good, and good for you.
