This week please welcome, Rachel Knecht, and her meal plans! Rachel is a recipe tester here on Simply Recipes and the blogger behind Baking with Rachel.

In May front doors are thrown open, bikes get dusted off and garden tools are rounded up. The neighbors wave to each other as seeds get tucked into rows.

I feel so grateful for the sun and want to share the abundance of the season with teachers, friends and, of course, mothers. This week's meals are perfect any occasion but especially for gathering people together for a meal. With minimal prep and food that pairs easily with multiple sides, there is sure to be something for everyone.
