Howdy!

I'm going to skip straight to the punchline today — if you own an Instant Pot or a pressure cooker, then you have GOT to try the Mushroom Risotto that we shared last week. I loooove a good risotto, but they do take a fair bit of TLC to do them right on the stovetop (I have memories of my chef-instructor from culinary school hovering over me chanting, "Stir...stir...stir...more stirring...") But the Instant Pot turns out perfect risotto all on its own without any hovering required. I. LOVE. IT.
