On Monday, we're kicking things off with Braised Chicken Thighs. This one-pan wonder is flavored with garlic, ginger, and plenty of soy sauce. No chicken thighs? Breasts work too, just be sure to check on them early and often, since they cook much more quickly than thighs. Tuesday we're digging into these loaded Twice Baked Sweet Potatoes. They're hearty on their own, but if you're looking for some added protein, a fried egg or some leftover chicken would certainly do the job. On Wednesday we're turning to one of our favorite comfort foods: Crock-Pot Lasagna. We swear it's even better the next day for lunch. We're super excited to make Mongolian Beef Ramen on Thursday. We wish we knew about this instant ramen upgrade in college, it's totally a game-changer. On Friday we're whipping up the coziest recipe of all—Mac & Chili Stew! A cross between American-style goulash and chili, this cheesy dinner is super adaptable. Any pasta shape will do, and if you don't have gruyere, pretty much any hard cheese will work. (Just make sure to use plenty of it. 😉)
