Monday we're keeping things suuuper simple with our Best-Ever Spanish Tortilla. What makes this recipe so easy? And who doesn't want potato chips for dinner? 😏 On Tuesday, we're celebrating Cinco de Mayo with these zesty Chipotle Lentil Tacos—and a marg, of course. Wednesday we're satisfying our burger craving with this Cheeseburger Casserole, AKA the easiest way to serve "burgers" to your family. Since comfort food never goes out of style, we're making Cauliflower Shepherd's Pie on Thursday. We love it because it's healthy, it's satisfying, and it requires those bags of frozen veggies we've had in our freezer for, well, forever. When we make it to Friday, we're celebrating with these insanely good Banh Mi Sandwiches. Nothing lifts the spirits like fluffy bread, perfectly seasoned meat, and bright, crunchy pickles.
