  Hi friends! Lena here with 5 crazy good dinners for the coming week.
On Monday, we're treating ourselves to some JalapeƱo Popper Crab Cakes. They may not be traditional, but we love the summery addition of corn and peppers. Tuesday we're whipping up these insanely juicy Lemongrass Chicken Thighs. That braising liquid is gold, so be sure to hold onto it to spoon over rice or dip your chicken in! Eggplant season is at it's peak, so on Wednesday we're making Eggplant Parmesan Roll-Ups. Don't worry, no deep frying necessary. (We wouldn't do that to you in this heat!) Thursday we're keeping things simple with Lemon Garlic Shrimp. They're great over pasta, or with some crusty toasted bread for dipping. Friday night is steak night, and we've got a buttery Round Steak that won't disappoint. Serve it with creamed spinach and scalloped potatoes for major steakhouse vibes. Happy cooking!
