Starting with Sichuan-Style "Fish-Fragrant" Eggplant on Monday. Despite the name, there is no trace of fish in this delicious and aromatic stir-fry. The secret ingredient in the salsa? Sherry vinegar. Pizza Taquitos are on the menu for Wednesday night. Stuffed with mozzarella, pepperoni, and marinara then brushed with garlic butter, it's a fun twist we think everyone will love. On Thursday, we'll make a super simple Maple Dijon Salmon. Everything—baby potatoes, brussels sprouts, and salmon fillets—cook on the same sheet pan. No mess = no stress. And finally, we'll celebrate Friday (and the upcoming weekend) with Caprese Chicken Lasagna.
