Risotto is the comfort food we all need right now. And to celebrate fall, we’re excited to share this creamy, addictive version made with leeks, Mimolette cheese and fried sage leaves.

What is Mimolette?

Mimolette is a nutty and earthy semi-hard cow’s milk cheese from France with a distinctive bright color and nutty flavor. It’s firm enough to grate (try it in an omelette sometime!), and is a wonderful addition to any cheese board, sandwich or salad.

Here, Mimolette turns a simple risotto into a stunning side dish special enough for the holiday table but easy enough to pull off on an average weeknight (honest!) With a buttery, caramel flavor and a fruity aroma, we can’t get enough.
