On Monday, if you still have leftovers, I highly suggest throwing them into Lena's Leftover Thanksgiving Crunchwraps. With that same make-do-with-what-you've-got attitude, Tuesday's recipe is Makinze's Vegetable Spaghetti. She uses a combo of zucchini, carrot, and red onion, but you can substitute whatever your heart desires. Wednesday is the perfect night for my Chicken Stew. I know it doesn't sound particularly exciting, but I can promise you it's just about as comforting as it gets. On Thursday, I recommend Chicken-Bacon Ranch Spaghetti Squash Boats. They're beautifully cheesy and the bacon paired with the ranch dressing is *chef's kiss*. And on Friday, as always, let's celebrate with something fun. I nominate Elote Nachos.
