| It's tradition to dig into pancakes today — Fat Tuesday, also known as Shrove Tuesday or Mardi Gras — so why not make yourself a delicious, extra-fluffy stack of Lemon Ricotta Pancakes! This holiday falls annually on the day before Ash Wednesday and the start of the Lenten season. Pancake dinners traditionally allowed Christian families one last decadent meal and were a way to use up their supply of butter, milk, and eggs before they began their Lenten fast.
