It's tradition to dig into pancakes today — Fat Tuesday, also known as Shrove Tuesday or Mardi Gras — so why not make yourself a delicious, extra-fluffy stack of Lemon Ricotta Pancakes! This holiday falls annually on the day before Ash Wednesday and the start of the Lenten season.
