Hello, friends!

There are two things that I learned in culinary school that I often think about this time of year. The first is that there are very few kitchen mistakes that can't be solved by adding a little more cream or butter. The second is that, if all else fails, open some wine.

Personally, I make sure that all three of these items are stocked in my kitchen at all times from Thanksgiving through to New Year's.

And it's true! Did your roast come out a little dry? Melt a pat of butter on top. Did the veggies get a little overdone while you were gabbing with your best friend? Stir in some heavy cream and call it "creamed vegetables." Does your soup taste a little bland? Add a splash of wine and pour yourself a glass, too.

We often talk about the stress of the holidays and the particular anxieties that arise when cooking for a roomful of guests. A good part of it is because entertaining isn't something most of us do often enough to become truly comfortable with it. So if you're feeling stressed, just repeat your new mantra: cream, butter, or if all else fails, wine (or your own refreshment of choice).
