We'll start the week with our Best-Ever Vegetarian Enchiladas. Don't stress about following the recipe exactly—it's extremely flexible and forgiving as long as there's melty cheese. Next up, we're honoring Taco Tuesday with this big and hearty Taco Casserole. It's so good, you'll want leftovers to last forever. On Wednesday we'll make Slow-Cooker Chicken Tortilla Soup. Literally anyone can make it. Enchilada Meatballs are on the menu for Thursday. They're meant to eat straight out of the skillet…with an ice cold beer on the side if you're so inclined. Crazy times call for crazy recipes. So on Friday we're making Quesadogas (hot dogs wrapped in quesadillas). Trust us, you'll be glad you did. Check out this week's recipes.
