In the Delish kitchen, we’re always pushing the boundaries of your favorite kitchen tools. Most recently: the Instant Pot.
While creating our cookbook, Party In An Instant Pot, we asked ourselves some pretty wild questions: Is it a pancake if you make it in a multi-cooker? (Definitely.) Do you even need an oven to bake brownies? (Nope.) Is it cheating to cook fall-off-the-bone ribs in 20 minutes? (All is fair in love and Instant Pots.)

There are too many buttons! Where do I start?
There are so many buttons. But really, we only use a few. If you’re looking to cook something quickly, you’ll use “Manual” or “Pressure Level” most often. (They’re the same thing; it just depends what model you have). In most of our dinner recipes, we’re pressure cooking at a high level. To sear foods, you’ll also want to use the “Sauté” button.

Why do I get the “burn” alert EVERY. SINGLE. TIME?
We’ve come across the same problem, and it’s SO frustrating. It really depends on the model of Instant Pot you have. Through all our testing, we’ve found that newer models (especially 9-quart capacity models) are more likely to show the burn warning. After sautéing something, we recommend removing the inner pot and letting it cool off for 5 to 10 minutes before moving on to the pressure cooking stage.

What are the best and worst foods to cook in an Instant Pot?
The best foods to cook: braised meats, beans, potatoes, soups, hard-boiled eggs. Not as ideal: crunchy food like fried chicken (the pressure cooking environment is too wet!), rare meats, most seafood, and cakes—with the exception of cheesecake (and the epic Peanut Butter Molten Cake from Party In An Instant Pot).

How do I know which recipes will work for my model of Instant Pot?
When cooking from Party In An Instant Pot, you should be able to use any model. Our Instant Pot Pancake is the only recipe where we recommend a certain size (6-quart).
